Dudson Launches at Foodcare!

Dudson by Churchill China has just launched July 2019. A fresh era for the heritage brand with new Harvest and Evo Origins ranges. Every piece within this collection is made in England by Churchill and is available to buy now!

Both of the collections are uniquely handcrafted but are designed with industrial toughness. All of the pieces have a fully vitrified body, creating an extremely strong and durable product, which can withstand the demands of a professional kitchen. With expert craftsmanship and innovative thinking the pieces feature fully glazed feet to prevent scratching when the product is stacked.

The Harvest collection is hand glazed, including the sponged rim, which naturally drips to make each piece unique, and they even come with an original markers mark on the bottom! This range includes plates, bowls and trays in five stunning colours: Natural, Linen, Brown, Green and Blue. These have all been designed to work in combination or isolation to create beautiful tabletop stories.

Young Seafood Chef of the Year 2019

Heat 1 Friday 10th May 2019

On Friday 10th May we had the pleasure of attending the regional heat of the SeaFish Young Seafood Chef of the Year competition 2019, at City College in Norwich..

This was the first of 3 heats taking place throughout May with the final scheduled for 14th June at Grimsby Institute. The day saw students from: University of West London, College of West London, Westminster College, Suffolk New College, North Herts College, Eastleigh College battle it out to secure a place in the final.

The three colleges to secure a place in the final were North Hertfordshire College, University of the West of London and Eastleigh College. Nicole Watt (18) and Bethany Grimshaw (18) earned their position by preparing a three-course menu of lemon sole ceviche, poached hake and paprika and chorizo dusted cod, all made using sustainably-sourced seafood.

Michael Worth (20) and James Tumilty (17) also made it through to the final with a menu of butter poached plaice, oven roasted fillet of hake and pan-fried fillet of cod. Finally, the last team of young chefs were Dominykas Salvaitis (20) and Timothy Hodgson (22) from University of West London who prepared Atlantic sole, sake cured Scottish hake and Icelandic cod Wellington

On winning the Chairman’s Choice the Committee have been overwhelmed with congratulatory emails from our members, which is an encouraging endorsement we are fulfilling the member's requirements.

The finalists will go on to compete against eight teams of two on 14th June. The judging panel for this years final includes Daniel Clifford, chef patron of two-Michelin starred Midsummer House restaurant, Cambridge, and two-time winner of BBC Two’s Great British Menu.

Two further heats are to take place later this month at Sunderland College and Coleg Llandrillo, North Wales.

Success for HCA East Anglian Branch

Celebrating a fantastic win for HCA East Anglian Branch

The East Anglia Branch were surprised and delighted to have been selected as the Chairman’s Choice in recognition for the progress made during the last year by the hard work from the Committee and branch members, it has been a true team effort.

Over the years the Branch has held regular meetings but attendance was generally overwhelmed with suppliers and professional operators showing little support or enthusiasm. Clearly, the Branch was not engaging with Full Members in a meaningful manner.

Being aware of this decline, the Branch committee, drawing in help from Members and suppliers, organised a study day. This event proved to be a big success with over 80 attending, most of whom were operators and healthcare professionals. For the committee and Branch in general, this was an encouraging message.

As a result of this success, in addition to Branch meetings, a ‘Work Shop’ was organised related to waste management. Another success, with high attendance. We also learned that a half day ‘Work Shop’ was preferable to a full study day.

The real mark of progress was in November when the AGM, usually supported by no more than about 10, was this year at 26, a huge improvement.

Listening to Full Members, the coming year's calendar includes a real mix of topics, from engaging with catering colleges, tackling the plastic revolution, inviting patients to discuss their eating experience and a dietetic presentation. Of course, we will be taking time out to socialise at Newmarket Races and our Christmas event is already booked.

The committee will continue to meet regularly every 4 to 6 weeks to monitor progress. 2019 will be a year of progress, improving communication, particularly by sharing agendas and events with our neighbouring HCA Branches. All are welcome.

Rotary Young Chef District Final

We had the pleasure of sponsoring the Rotary Young Chef District Final at College of West Anglia on
Saturday 3 February.

The competition has been running for a number of years and is designed to find the region’s best Young Chef. This year 6 students battled it out to take home the title.

The two judges for the day were fellow Rotary members Peter Senior, a chef, and Robin Twigge Owner of the Swan Hotel. The judges had the difficult task of marking the students across 10 different areas including costing, planning and healthy choice of dishes.

After a very close competition Ellie Smy 15, a pupil at Farlingaye High School in Woodbridge was crowned the Winner followed by Runner up Ben Templeton 13, a pupil at Westley Middle School in Bury St. Edmunds. Both Students received a Garnish Set and a copy of the Norfolk Cookbook provided by Foodcare.

The Dish of the day was produced by Kyle Jacklin, 17 who is currently an A level pupil at College of West Anglia. His menu included a starter of Goats cheese and tomato arancini, seasoned with oregano, followed by a main of mussel and scallop linguini and for dessert an Irish coffee pannacotta.
